Job Description


The Head Bakers needs to oversee the Bread Baking Department of a specific store to meet the daily production goals for baked goods. For a head bread baker, that means executing in preparing the dough, shaping them, proofing them, and finally baking and cooling them. When making breads, you will prepare the dough, then shape and fill them as needed. The Head Bread Baker will bake breads according to Maison Kayser’s unique recipes and will ensure that the products produced in the bakery meet our quality standards, while maintaining a clean and sanitary food area.

Essential Functions:

  • Follow the production schedule given by the Executive Head Baker to bake a variety and quantity of different types of breads.
  • Oversee the daily production of the Bakery and make sure the Bakers are following Maison Kayser's procedures and standards when baking our high quality bread.
  • Measure and mix ingredients to form dough, according to recipes.
  • Roll, cut, and shape dough to form rolls and bread and related products.
  • Place dough in pans, molds, or on sheets and bake in oven. Observe products while baking and adjust controls.
  • Use a variety of kitchen tools, including large mixers, dough divider, pans, rolling pins, and cutting tools.
  • Monitor baking process according Maison Kayser’s standard recipe and identify needed adjustments.
  • Get information from the Executive Head Baker for production schedules and recipes to distribute to the Bakers.
  • Handle and move ingredients, tools, and cooking pans.
  • Implement products according to recipes.
  • All other duties as assigned by the Executive Head Baker.

Requirements:

  • Minimum 3 year of experience in bread and related production; French Baking highly desired
  • Degree from a post-secondary culinary arts training program is highly preferred
  • Experience with an oven a must
  • Must have open availability to work earning morning shifts or late night shifts, weekends and holidays.
  • Must understand knowledge of high quality products and be passionate about breads
  • Desire to learn and to build successful career at Maison Kayser
  • Must be able to lift and carry up to 40lbs
  • Be able to work in a standing position for long periods of time up to 8 hours
  • Must be able to push or pull up to 150 lbs in duration of shift.
  • Will require bending, stooping, and occasional use of a ladder.
  • Will work with ovens in high temperatures and also within the cooler temperatures during shift.
  • Must be able to work at multiple locations during the same shift as needed.
  • Must be able to communicate effectively with management and team members.
  • Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards
